Cocktail of the week: Andy Clarke’s Santorini sunset – recipe | The good mixer

A big, fruity punch that’s ideal for a picnic

The first thing I did on arrival in Santorini a few years ago was to grab a cocktail by the pool as the sun set, and the colours of the drink were so vibrant that I just had to try to replicate its visual charm back home. The ingredients in the original weren’t anything like those I’ve used here, but it did inspire the cocktail’s name. This is not a strong drink – it is more refreshing and fruity than alcoholic – so it’s ideal as a pre-mix to take on a picnic; if you fancy more of a kick, up the gin by 100ml.
