NMSU meat judging team returns

LAS CRUCES, N.M. (KRQE) – New Mexico State University (NMSU) is bringing back its famous meat judging team. NMSU students with the chops see if they have what it takes to be a cut above the rest.

According to the university, training for the collegiate competition has been a primary focus for the meat judging team since the 1900s, and after nearly a 40-year hiatus, the team made a comeback.

The university’s meat team judges massive cuts of beef for quality and yield grade, using skills they learn through the program. The team’s head coach, Jacob Painter, draws from his background in meat and livestock judging to teach students about product quality, fabrication procedures, and meat industry marketing.
